Quick & Easy Bacon Feta Mini Meat Loaves

This isn’t meat loaf the way you remember it! These individual loaves are loaded with veggies, smoky bacon and tangy feta cheese.

The flavor is outstanding, and you can enjoy a hearty main dish any night of the week since you can have these loaves on the table in only 30 minutes thanks to baking them in a muffin pan.

Use grass-fed beef for the richest, cleanest flavor in these meat loaves, or feel free to switch it up with bison or even ground turkey breast. If you use turkey breast, you may want to cut the bread crumb amount in half since turkey breast is almost zero fat and drier than the beef or bison.

Top the cooked loaves with extra crumbled bacon and feta if you like, and serve with a crisp green salad for an easy, delicious gluten-free meal.
