Ingredients

  • 1 Small sweet onion, minced (approximately 1/2 cup)
  • 1 cup Shredded cheddar cheese (substitute dairy-free “cheese” if you prefer)
  • ½ cup Mayonnaise
  • ¼ tsp Garlic powder
  • Several grinds black pepper
  • 3 Medium tomatoes, sliced thin
  • 2 cups Gluten Free Flour Blend
  • 2 ¼ tsp Baking powder
  • ½ tsp Salt
  • 1 tsp Dried crushed basil
  • 1 cup Milk (use dairy- or plant-based milk)

Instructions

  1. Combine the first 5 ingredients in a small mixing bowl, stir and set aside.
  2. Preheat your oven to 400F and grease a 9x13x2-inch baking pan.
  3. In a separate mixing bowl, whisk flour, baking powder, salt, basil and stir in the milk. The mixture will form a dough that comes together easily and is not crumbly or sticky.
  4. Turn the dough into the pan and with lightly oiled hands, press the dough into the pan evenly and about ½-inch up the sides of the pan.
  5. Layer sliced tomatoes over the dough, then evenly spread the cheese/mayonnaise mixture over the tomatoes.
  6. Bake 25 minutes, then remove from the oven and allow bread to stand at room temperature for 10 minutes before slicing into squares to serve.
