The flavor is outstanding, and you can enjoy a hearty main dish any night of the week since you can have these loaves on the table in only 30 minutes thanks to baking them in a muffin pan.

Use grass-fed beef for the richest, cleanest flavor in these meat loaves, or feel free to switch it up with bison or even ground turkey breast. If you use turkey breast, you may want to cut the bread crumb amount in half since turkey breast is almost zero fat and drier than the beef or bison.

Top the cooked loaves with extra crumbled bacon and feta if you like, and serve with a crisp green salad for an easy, delicious gluten-free meal.

Quick & Easy Bacon Feta Mini Meat Loaves

Ingredients

  • 4 Strips of bacon
  • 1/2 cup Shredded carrot
  • 1/2 cup Diced onion
  • 1/2 cup Gluten-Free Bread Crumbs
  • 1 large Egg
  • 2 Cloves minced garlic
  • 1 tsp. Ground dried sage
  • 1 tsp. Dried basil
  • 1/4 tsp. Fresh ground black pepper
  • 1 Pound ground beef
  • 1/2 cup Crumbled feta cheese
  • Suggested garnish (optional):
  • Crumbled cooked bacon and crumbled feta cheese

Instructions

  1. Preheat oven to 375F and lightly grease a 12-section muffin pan.
  2. In a skillet, cook bacon over medium-high heat until crisp. Place bacon on a paper towel lined plate to drain. Retain bacon fat in skillet.
  3. In the same skillet where the bacon cooked, cook carrot and onion (in the bacon fat that remains in the pan) 4-5 minutes, until slightly tender. Remove from the heat and set carrot and onion aside.
  4. In a large mixing bowl, combine ground beef, cooked carrot/onions, bread crumbs, egg, and seasonings. Crumble the cooked bacon strips into the bowl, then mix well to distribute the ingredients.
  5. Fold in goat cheese, then divide mixture into 12 equal portions, placing each portion into a section of the prepared pan.
  6. Bake approximately 18-20 minutes or until cooked through. A meat thermometer inserted into the center of one of the mini meat loaves should read 160F for safe consumption.
  7. Remove from oven when done, allow to rest in pan 2 minutes before serving.
  8. Top with additional crumbled bacon and feta if desired.
