The pasta is lightly coated with a delicious red bell pepper cream sauce, and the chorizo sausage gives a warm, interesting flavor to this simple Italian pasta dish.

Chorizo sausage is a Spanish sausage made with many spices especially paprika. When used in cooking this well-spiced sausage will add a lot of flavor to sauces, stews or soups.

Chorizo sausage can also be hard like a pepperoni that does not need cooking and can be served as an appetizer. When you are craving Italian food, nothing beats a bowl of delicious pasta.

Don’t forget to add plenty of fresh Parmesan cheese and fresh basil on top; it finishes this dish perfectly.

Pasta With Chorizo and Red Bell Pepper Cream Sauce

Ingredients

  • 2 raw Gluten Free Chorizo Sausages (most butchers have them)
  • 2 Tbsp. Butter or extra virgin olive oil, divided
  • 3 Garlic cloves, roughly chopped
  • 1 large Tomato, roughly chopped
  • 1 Fresh Red Chili Pepper, deseeded and chopped (optional)
  • 1 tsp. Dried basil
  • 1 tsp. Dried oregano
  • ½ tsp. Dried thyme
  • ½ cup Gluten Free Chicken Broth
  • 1 cup Heavy cream
  • 1 Red Bell Pepper, deseeded and sliced
  • 1 cup Freshly grated Parmesan cheese plus some for topping
  • ½ tsp. Sea salt
  • 12 oz. (350 grams) Gluten Free Penne Pasta (rice or quinoa)
  • ¼ cup Basil leaves, roughly chopped plus some for garnish

Instructions

  1. Pop the sausages out of their skins, roll each into 6 balls
  2. Melt 1 tablespoon of butter in a large oven-proof skillet over medium-high heat. Add chorizo balls and sear on all sides until golden brown. Transfer to a plate
  3. Add 1 tablespoon of butter and garlic to the skillet and cook over medium-low heat, frequently stirring, until fragrant, about 1-2 minutes, add fresh tomato, red chili pepper, basil, oregano and thyme and cook 1 more minute.
  4. Stir in chicken broth, cream, red pepper, Parmesan cheese, chorizo balls and salt. Cook over low heat for 15 minutes
  5. While the sauce is cooking prepare your pasta as per package instructions
  6. Add cooked pasta to the sauce with basil leaves and stir to combine
  7. Serve immediately topped with Parmesan cheese and basil leaves
