Gluten Free Minestrone Soup

Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 2 Garlic cloves, crushed
  • 1 small Onion, chopped
  • 1 small Leek, diced
  • 1 tsp. Dried oregano
  • 1 tsp. Dried marjoram
  • 1 tsp. Paprika
  • 1 tsp. Sea salt
  • ¼ tsp. Freshly ground black pepper (or to taste)
  • 1 Bay leaf
  • 2 x (13.5 oz.) Crushed tomatoes
  • 4 cups Gluten Free Vegetable Broth
  • ½ lb. Green beans, cut to bite size (Depending on your diet)
  • 2 Carrots, diced
  • 2 Celery sticks, diced
  • 1 x (13.5 oz.) Cannellini beans, rinse and drain (Depending on your diet)
  • 2 cups Sliced kale or chard, stems removed
  • ½ cup Gluten Free Elbow Pasta
  • 1 small Zucchini, roughly chopped
  • ½ cup Chopped basil
  • 1 cup Parmesan cheese

Instructions

  1. In a large pot heat olive oil over medium heat and add garlic, onion and leek. Sauté for 5 – 8 minutes until soft
  2. Stir in spices and then tomatoes, broth, green beans, carrots and celery. Cook for 15 minutes.
  3. Add cannellini beans, kale/chard and pasta and cook for 10 more minutes, or until the pasta is al dente, this means soft enough to eat but still firm
  4. Stir in zucchini and basil and bring to boil, then immediately remove from the heat and cover for 5 minutes
  5. Serve with Parmesan cheese
