In this easy to make gluten free apple pie recipe, you will be pleasantly surprised of how delicious this pie is.

Choosing the right apples when making a pie is the key, they should have a crispy yet tender texture and they should be on the tarter side.

There is nothing worst then a soggy pie. In this recipe the apples used are either Honey Crisp or Granny Smith. If you have never made an apple pie from scratch, try this recipe; the only thing that is complicated about this dessert is the taste. To serve add a dollop of ice cream and enjoy!

Gluten Free Classic Apple Pie

Ingredients

    The Crust (2 single crusts)
  • 1 1/3 cup Rice flour (white or brown)
  • 1 cup Sorghum Flour
  • 1 cup Tapioca Starch
  • 3 Tbsp. Coconut Sugar
  • 1 tsp. Sea salt
  • 1 cup Cool unsalted butter, cut in small pieces
  • 4 Eggs
  • 2 Tbsp. Cold water or more if needed
  • The Apple Filling
  • 5 cups Peeled, cored and thinly sliced apples, such as Honey Crisp or Granny Smith,
  • 2 Tbsp. Lemon juice
  • 1 tsp. Pure vanilla extract
  • Zest of 1 lemon
  • 1/2 cup Agave nectar or pure maple syrup
  • 2 tsp. Ground cinnamon
  • 3 Tbsp. Certified Gluten Free Rolled Oats
  • 2 Tbsp. Butter, cut in small pieces
  • 2 Tbsp. All Purpose Gluten Free Flour
  • Egg wash for finish
  • 1 Egg plus 1 Tbsp. water
  • 1 Tbsp. Coconut sugar

Instructions

    The Crust
  1. Stir flour, tapioca starch, sugar and salt to combine. Cut in the butter until the mixture has a rough, crumbly texture, leaving a few larger pieces of butter visible
  2. In a small dish, whisk the eggs and water. Add this to the flour mixture, and stir until the dough comes together
  3. Shape the dough into a disc, wrap it, and chill for just 15 minutes
  4. Divide dough into two equal pieces. Line your counter with parchment paper and place dough on top. Top with another piece of parchment paper and roll into a circle that will fit your pie dish, about 12-inches round. Remove top sheet of paper and gently transfer the dough by sliding it off the paper in to a well-greased pie dish and press down and up the sides.
  5. The Apple Filling
  6. Toss apple slices with lemon juice, vanilla, lemon zest, agave and cinnamon. Add oats, butter pieces and flour and gently mix. Fill unbaked pie crust and slightly press the apples down
  7. Top Crust
  8. Roll out dough for top crust between two sheets of parchment paper. Remove one sheet of paper. Carefully transfer onto filled pie. Seal and crimp edges. Cut slits in top crust to vent steam
  9. To Finish
  10. Preheat oven to 375 F
  11. Whisk egg and water in small bowl. Brush on top crust. Sprinkle with sugar.
  12. Bake for 15 minutes, then reduce heat to 350 F and bake 50 more minutes or until the crust is golden and the pie is bubbling. Cool before serving
