Gluten Free Cheese and Onion Scones

Ingredients

  • 2 Tbsp. Butter or Extra virgin olive oil
  • 1 medium Onion, chopped
  • 1 cup + 1 Tbsp. All Purpose Gluten Free Flour
  • 1 tsp. Aluminum Free Baking Powder
  • ½ tsp. Sea salt
  • ½ tsp. Dried thyme leaves
  • 2 Tbsp. Chopped fresh parsley
  • 1 cup Shredded Cheddar Cheese (or any of your liking, such as Vegan Cheeses)
  • ½ cup Milk or Cream plus some for brushing

Instructions

  1. Preheat oven to 420 F
  2. Sauté onions in butter/oil over medium heat until soft, about 5 minutes. Then cool
  3. Combine flour, baking powder, salt, thyme, parsley and cheese
  4. Add cooked onions and milk into dry ingredients and mix just until everything is combined. Do not over mix
  5. With a tablespoon drop the batter about ¼ cup each on a baking sheet lined with parchment paper and slightly press down
  6. Bake for 12 – 15 minutes, or until the scones are golden
