Spiked with minced jalapeno pepper and grated Parmesan cheese, these bite size fritters make the perfect side with a bowl of chili or soup in cooler weather.
You can also serve them as an appetizer with butter (stir in a little cilantro) and lime wedges. They make an ideal make-ahead appetizer or snack since they are equally delicious piping hot from the oven or at room temperature.
As with all ingredients, make sure your cornmeal is labeled gluten-free. Corn is a grain, but is naturally gluten-free, however, traditional cornmeal is often cross-contaminated during manufacturing or packaging with gluten, so be aware.
