This no-bake French dessert is fantastically silky, creamy, and yet not too heavy with a thin walnut crust. Tofu is the key ingredient in this recipe and because it is gluten free, grain free, dairy free, egg free and vegan it is suitable for most restricted diets.

This decadent cake may look complicated, but it takes only fifteen minutes of hands-on prep time. Next time when you are entertaining, impress your guests with this delicious dessert, they will never know it is gluten free.

This lovely cake will keep up to five days when refrigerated.

French Silk Mocha Cake

Ingredients

    The Crust
  • 1 ½ cups Walnuts
  • 8 Pitted medjool dates
  • 2 Tbsp. Pure cocoa powder
  • The Cake
  • 10.5 oz. Gluten Free medium tofu, room temperature
  • 1/3 cup Pure cocoa powder
  • ¼ cup Agave nectar
  • 1 tsp. Pure vanilla extract
  • ¼ tsp. Sea salt
  • 1 Tbsp. Butter or Coconut Oil
  • 2/3 cup Gluten Free Chocolate Chips
  • 1 tsp. Instant espresso powder
  • ¼ cup Full fat Greek plain yogurt or coconut cream for swirls (optional)

Instructions

  1. Line the bottom of 7-inch spring cake pan with a circle of parchment paper
  2. Process walnuts, dates, and cocoa powder in a food processor into a fine crumble. Transfer into a prepared cake pan and firmly press along the base. Place in the freezer while preparing the cake
  3. Blend tofu until smooth in a blender. Add cocoa powder, agave, vanilla and salt and blend until smooth
  4. Over medium-low heat melt the butter with chocolate chips and espresso, stirring continuously. Add to the blender and blend until smooth
  5. Pour over prepared crust and tap the pan on the counter few times to smooth the cake
  6. Drizzle yogurt using a piping bag creating a swirl pattern
  7. Freeze cake for 1 hour, and then refrigerate overnight. Enjoy
