If you love chocolate and decadent desserts on occasion, this recipe is made for you!

A rich fudgy brownie is topped with a gooey layer of melted marshmallows then drenched in sweet chocolate frosting for the chocolate sensation of your dreams! Plan ahead so you can assemble these and allow them to cool before slicing. It really is worth the wait to allow the flavors and textures to meld and the chocolate icing on top to “set”. Slicing the brownies into squares is much easier after they’ve had a chance to cool a bit.

Serve these at room temperature with a scoop of vanilla ice cream if you’re feeling particularly indulgent, or for an extra chewy treat, forego the ice cream and chill the brownies in the refrigerator (that aids slicing, too!).

Decadent Marshmallow Fudge Brownies

Ingredients

    For the brownies:
  • ½ cup Oil (any neutral tasting oil you use in your baking)
  • 1 cup Granulated sugar
  • 2 large Eggs
  • ¾ cup Gluten Free Flour Blend
  • 3 Tbsp. Cocoa powder, sifted
  • ½ tsp. Salt
  • 6 Tbsp. Milk (dairy or plant-based)
  • 2 tsp. Pure vanilla extract
  • 4 cups Mini marshmallows (these go on after baking)
  • For the frosting:
  • 2 cups Confectioners Sugar, sifted
  • 3 Tbsp. Cocoa powder, sifted
  • ¼ cup Milk (dairy or plant-based)
  • 2 Tbsp. Butter (use dairy-free butter substitute if you prefer)

Instructions

  1. Preheat your oven to 350F and lightly greased 9x13-inch baking pan.
  2. In a small mixing bowl, whisk together flour, cocoa and salt.
  3. In a separate, larger mixing bowl, stir together oil and sugar, then add eggs, stirring until mixture is uniform.
  4. Add dry ingredients and stir, then add milk and vanilla extract, stir to blend, then pour batter into prepared pan.
  5. Bake 25 minutes, then remove from the oven. Turn off the oven and top brownies evenly with mini marshmallows, then return to the oven (the oven is off, but will still be hot) for 5 minutes to melt marshmallows a bit.
  6. Remove brownies from oven, set aside while you make the frosting by whisking together frosting ingredients in a bowl.
  7. Pour frosting over marshmallows/brownies, then set aside to cool completely before slicing into squares. Refrigerate if you prefer.
