Creamy Baked Mac ‘n Cheese

Ingredients

  • 12 ounces of Gluten Free Pasta (use elbow or rotini noodles)
  • 2 Tbsp. Butter (or an equal amount of dairy-free butter substitute)
  • A heaping 1/4 cup of Gluten Free Flour Blend
  • 4 cups Milk (use dairy or dairy-free milk of your choice)
  • 3 cups Shredded cheddar cheese (for dairy-free, substitute an equal amount of your preferred dairy-free “cheese” product)
  • 1/2 tsp. Salt
  • Fresh ground pepper, optional/to taste
  • Paprika, for topping dish prior to baking

Instructions

  1. Prepare pasta according to package directions, cooking to just al dente (barely tender); drain cooked pasta and toss with the butter; set aside.
  2. Preheat your oven to 400F and grease a 9x13-inch casserole.
  3. Add cheese to pasta in bowl and toss, then pour the mixture into the prepared baking dish.
  4. Pour the milk into a bowl and whisk in the flour and salt until smooth.
  5. Pour the milk mixture over the pasta in the baking dish, sprinkle the top with paprika and bake for approximately 45 minutes, until sauce is thick and top begins to brown lightly.
  6. Allow dish to sit at room temperature 15 minutes prior to serving.
