These gluten-free zucchini fries are all about texture, making them crispy but not too heavy with delicately flavored coating, also zucchinis are an amazing source of potassium and fiber.

The creamy dip goes especially well with the zucchini fries. It’s great for an afternoon snack – much better than an empty set of carbs coming from popcorn or crackers that will leave you hungry again in half an hour.

You can also use this dip with any of your other favorite recipes. It’s amazing how delicious dips disappears when you’re feeding a crowd!

Ingredients

  • 3 medium Zucchini
  • ½ cup Blanched Almond Flour
  • 1/3 cup Garbanzo Flour
  • ½ cup Grated Parmesan Cheese
  • ½ tsp. Garlic powder
  • ½ tsp. Dried basil
  • ½ tsp. Himalayan Pink Salt
  • ¼ tsp. Black pepper
  • 2 large Eggs, beaten
  • Fresh parsley for garnish
  • The Dip:
  • ¼ cup Plain Greek yogurt
  • ¼ cup Gluten Free Mayonnaise
  • 2 Tbsp. Gluten Free Dijon mustard
  • 1 Tbsp. Siracha Sauce (spicy sauce) optional
  • 1 Minced garlic clove

Instructions

  1. Preheat oven to 425 F. Line a baking sheet with parchment paper and place a cooling rack on top and brush with a little oil
  2. To prepare zucchini, slice both ends off and cut into evenly sized fries
  3. In a large bowl combine flour, cheese, garlic powder, basil, salt and pepper
  4. Dip zucchini pieces into eggs and then drench in flour mixture
  5. Place coated zucchini on the prepared cooling rack and bake 25 – 30 minutes or until golden brown and crispy
  6. The Dip:
  7. Whisk all the ingredients together
  8. To serve, sprinkle fresh parsley over hot fries and serve with the dip
